Getting on a healthy eating path does not mean you have to give up your favorite foods. My favorite food is Mexican food, and I love a great rotel dip. One day I wanted to make rotel for our family's movie night. I knew my husband and I were on a meatless week diet, but I still wanted the rotel. So, I decided to make a veggie rotel dip with black beans, corn, and peppers. It was amazing and from there I started changing all of my recipes into healthier versions. If I can do it, you can do it too.
